Vegetarian Soup Dumplings


Ingredients:

For the dough:

  • 2 cups all-purpose flour
  • 1 cup boiling water

For the filling:

  • 2 cups finely chopped vegetables (such as mushrooms, carrots, cabbage, and spinach)
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • Salt and pepper to taste

For the soup:

  • 2 cups vegetable broth
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil

Instructions:

  1. Prepare the dough:

    • Place the flour in a large mixing bowl and gradually add the boiling water while stirring with chopsticks or a wooden spoon.
    • Once the dough comes together, knead it on a floured surface for about 5 minutes until smooth.
    • Cover the dough with a damp cloth and let it rest for 30 minutes.
  2. Make the filling:

    • In a large skillet, heat some oil over medium heat. Add the garlic and ginger and sauté for a minute until fragrant.
    • Add the chopped vegetables and cook until they are softened, about 5-7 minutes.
    • Stir in the soy sauce, sesame oil, sugar, salt, and pepper. Remove from heat and let the filling cool.
  3. Prepare the soup:

    • In a small saucepan, combine the vegetable broth, soy sauce, rice vinegar, and sesame oil. Bring to a simmer over medium heat and then remove from heat.
  4. Assemble the dumplings:

    • Divide the dough into small balls, about 1 tablespoon each. Roll out each ball into a thin circle, about 3 inches in diameter.
    • Place a spoonful of the vegetable filling in the center of each dough circle. Fold the edges of the dough up and pinch them together to seal, creating a small pouch.
    • Place the dumplings on a parchment-lined baking sheet.
  5. Steam the dumplings:

    • Fill a large pot with water and bring it to a boil. Place a steamer basket or bamboo steamer over the pot.
    • Arrange the dumplings in the steamer basket, making sure they are not touching each other. Cover the steamer and steam the dumplings for 8-10 minutes until the dough is cooked through.
  6. Serve:

    • Carefully transfer the dumplings to serving plates. Serve them hot with the warm soup on the side for dipping.
