Introduction and History :

Lamb Rogan Josh is a classic dish hailing from the rich culinary traditions of Kashmir, India. Known for its vibrant color, intense flavors, and tender meat, this dish is a hallmark of Indian cuisine. The name "Rogan Josh" is derived from Persian, where "Rogan" means "oil" and "Josh" means "intense heat." Traditionally, this dish was prepared with lamb, slow-cooked to perfection with a blend of aromatic spices and yogurt. Over the years, Lamb Rogan Josh has gained popularity worldwide, celebrated for its deep, complex flavors and the luxurious richness it brings to the table.

Ingredients :

For the Lamb Marinade:

  • 1 lb (450g) lamb shoulder, cut into cubes
  • 1 cup plain yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • Salt to taste

For the Rogan Josh:

  • 2 tablespoons vegetable oil or ghee
  • 1 large onion, finely chopped
  • 2-3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 teaspoon cumin seeds
  • 4-5 green cardamom pods
  • 2-3 cloves
  • 1 cinnamon stick

  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional, for extra heat)
  • 1 teaspoon garam masala
  • 2 tablespoons tomato paste
  • 1 cup beef or lamb broth
  • 1/2 cup heavy cream or coconut milk (optional for extra richness)
  • Fresh cilantro, chopped (for garnish)

1. Marinate the Lamb:

  • In a large bowl, mix the yogurt, ginger-garlic paste, turmeric powder, and salt.
  • Add the lamb cubes and coat them evenly with the marinade.
  • Cover and refrigerate for at least 1 hour, or overnight for best results.

2. Prepare the Rogan Josh:

  • Heat the vegetable oil or ghee in a large, heavy-bottomed pot over medium heat.
  • Add the cumin seeds, cardamom pods, cloves, cinnamon stick, and bay leaf. Sauté until fragrant, about 1-2 minutes.
  • Add the chopped onions and cook until golden brown, stirring occasionally.
  • Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes.
  • Add the ground coriander, ground cumin, paprika, and cayenne pepper. Cook for 1-2 minutes, stirring constantly to prevent burning.

3. Cook the Lamb:

  • Add the marinated lamb to the pot, stirring to combine with the spices and onions.
  • Cook until the lamb is browned on all sides, about 5-7 minutes.
  • Stir in the tomato paste and cook for another 2-3 minutes.
  • Pour in the broth and bring to a simmer.
  • Reduce the heat to low, cover, and let it cook for 1-1.5 hours, or until the lamb is tender and the sauce has thickened.

4. Finish the Dish:

  • If using, stir in the heavy cream or coconut milk and cook for an additional 5-10 minutes.
  • Adjust the seasoning with salt and add the garam masala, stirring to combine.
  • Remove from heat and let it rest for a few minutes.

5. Serve:

  • Garnish with fresh cilantro and serve hot with steamed rice, naan, or your favorite Indian bread.
