  • 2 tablespoons vegetable oil or ghee
  • 1 large onion, finely chopped
  • 2-3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 teaspoon cumin seeds
  • 4-5 green cardamom pods
  • 2-3 cloves
  • 1 cinnamon stick
  • 1 bay leaf
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional, for extra heat)
  • 1 teaspoon garam masala
  • 2 tablespoons tomato paste
  • 1 cup beef or lamb broth
  • 1/2 cup heavy cream or coconut milk (optional for extra richness)
  • Fresh cilantro, chopped (for garnish)

Instructions

1. Marinate the Lamb:

  • In a large bowl, mix the yogurt, ginger-garlic paste, turmeric powder, and salt.
  • Add the lamb cubes and coat them evenly with the marinade.
  • Cover and refrigerate for at least 1 hour, or overnight for best results.

2. Prepare the Rogan Josh:

  • Heat the vegetable oil or ghee in a large, heavy-bottomed pot over medium heat.
  • Add the cumin seeds, cardamom pods, cloves, cinnamon stick, and bay leaf. Sauté until fragrant, about 1-2 minutes.
  • Add the chopped onions and cook until golden brown, stirring occasionally.
  • Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes.
  • Add the ground coriander, ground cumin, paprika, and cayenne pepper. Cook for 1-2 minutes, stirring constantly to prevent burning.

3. Cook the Lamb:

  • Add the marinated lamb to the pot, stirring to combine with the spices and onions.
  • Cook until the lamb is browned on all sides, about 5-7 minutes.
  • Stir in the tomato paste and cook for another 2-3 minutes.
  • Pour in the broth and bring to a simmer.
  • Reduce the heat to low, cover, and let it cook for 1-1.5 hours, or until the lamb is tender and the sauce has thickened.

4. Finish the Dish:

  • If using, stir in the heavy cream or coconut milk and cook for an additional 5-10 minutes.
  • Adjust the seasoning with salt and add the garam masala, stirring to combine.
