Introduction:

Paneer Kathi Rolls Recipe:

Ingredients:

  • 200 grams paneer (Indian cottage cheese), cut into thin strips or cubes
  • 4-6 whole wheat or all-purpose flour tortillas or rotis
  • 1 large onion, thinly sliced
  • 1 large bell pepper (capsicum), thinly sliced
  • 1-2 green chilies, finely chopped (adjust to taste)
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt, to taste
  • 2 tablespoons cooking oil
  • Fresh coriander (cilantro) leaves, chopped
  • Lemon wedges, for serving

For Assembly:

  • Mint chutney or coriander chutney
  • Tamarind chutney
  • Thinly sliced cucumber and carrot (optional)
  • Chaat masala, for sprinkling (optional)

Instructions:

  1. Heat 1 tablespoon of oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add sliced onions, bell peppers, and green chilies. Sautรฉ until the vegetables are tender-crisp.
  3. Push the vegetables to one side of the pan and add ginger-garlic paste. Sautรฉ until aromatic.
  4. Add turmeric powder, red chili powder, garam masala, and salt. Mix well with the vegetables.
  5. Add paneer strips or cubes to the pan. Stir gently to coat the paneer with the spices and vegetables. Cook for 2-3 minutes until paneer is heated through.
  6. Remove from heat and set aside.
  7. Warm the tortillas or rotis on a griddle or skillet until they are soft and pliable.
  8. Spread a spoonful of mint chutney or coriander chutney on each tortilla.
  9. Place a portion of the paneer and vegetable mixture on one side of the tortilla.
  10. Roll up the tortilla tightly, enclosing the filling.
  11. Secure the ends with a toothpick if needed.
  12. Repeat with the remaining tortillas and filling.
  13. Serve Paneer Kathi Rolls hot, garnished with chopped coriander leaves and a sprinkle of chaat masala.
  14. Accompany with lemon wedges and additional chutneys on the side.
