- 1/2 teaspoon red chili powder (adjust to taste)
- Salt, to taste
- 2 tablespoons cooking oil
- Fresh coriander (cilantro) leaves, chopped
- Lemon wedges, for serving
For Assembly:
- Mint chutney or coriander chutney
- Tamarind chutney
- Thinly sliced cucumber and carrot (optional)
- Chaat masala, for sprinkling (optional)
Instructions:
- Heat 1 tablespoon of oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add sliced onions, bell peppers, and green chilies. Sautรฉ until the vegetables are tender-crisp.
- Push the vegetables to one side of the pan and add ginger-garlic paste. Sautรฉ until aromatic.
- Add turmeric powder, red chili powder, garam masala, and salt. Mix well with the vegetables.
- Add paneer strips or cubes to the pan. Stir gently to coat the paneer with the spices and vegetables. Cook for 2-3 minutes until paneer is heated through.
- Remove from heat and set aside.
- Warm the tortillas or rotis on a griddle or skillet until they are soft and pliable.
- Spread a spoonful of mint chutney or coriander chutney on each tortilla.
- Place a portion of the paneer and vegetable mixture on one side of the tortilla.
- Roll up the tortilla tightly, enclosing the filling.
- Secure the ends with a toothpick if needed.
- Repeat with the remaining tortillas and filling.
- Serve Paneer Kathi Rolls hot, garnished with chopped coriander leaves and a sprinkle of chaat masala.
- Accompany with lemon wedges and additional chutneys on the side.
