1. Tom Yum Goong (Thai Hot and Sour Shrimp Soup)

  • 1 stalk lemongrass, smashed and cut into 2-inch pieces
  • 3-4 kaffir lime leaves
  • 3 cups chicken or shrimp stock
  • 200g shrimp, peeled and deveined
  • 200g mushrooms (straw or oyster), sliced
  • 2-3 Thai bird's eye chilies, sliced
  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon sugar
  • Fresh cilantro leaves for garnish

Instructions:

  1. In a pot, combine lemongrass, kaffir lime leaves, and stock. Bring to a boil.
  2. Add shrimp, mushrooms, and chilies. Simmer until shrimp are cooked.
  3. Season with fish sauce, lime juice, and sugar. Adjust seasoning to taste.
  4. Garnish with cilantro leaves and serve hot.

2. Pad Thai (Thai Stir-Fried Noodles)

Ingredients:

  • 200g rice noodles, soaked in warm water until soft
  • 200g shrimp, chicken, or tofu
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 shallot, thinly sliced
  • 1 egg
  • 2 tablespoons fish sauce
  • 1 tablespoon tamarind paste
  • 1 tablespoon sugar
  • 1 cup bean sprouts
  • 2 tablespoons roasted peanuts, chopped
  • Lime wedges for serving

Instructions:

  1. Heat oil in a wok. Add garlic and shallot, stir-fry until fragrant.
  2. Push ingredients to one side of the wok and crack the egg. Scramble until cooked.
  3. Add shrimp, chicken, or tofu. Cook until protein is almost done.
  4. Add soaked rice noodles, fish sauce, tamarind paste, and sugar. Stir-fry until noodles are well-coated.
  5. Toss in bean sprouts and chopped peanuts. Stir-fry for another minute.
  6. Serve hot with lime wedges on the side.

3. Green Curry Chicken (Gaeng Keow Wan Gai)

Ingredients:

  • 500g chicken thigh, sliced
  • 2-3 tablespoons green curry paste
  • 400ml coconut milk
  • 1 cup Thai eggplant, halved
  • 1 red chili, sliced
  • 1 tablespoon fish sauce
  • 1 tablespoon palm sugar
  • Thai basil leaves for garnish

Instructions:

  1. In a pot, heat coconut milk and green curry paste until fragrant.
  2. Add chicken and simmer until cooked.
  3. Add Thai eggplant and chili. Cook until eggplant is tender.
  4. Season with fish sauce and palm sugar. Adjust seasoning to taste.
  5. Garnish with Thai basil leaves and serve hot with jasmine rice.
