Ingredients:

2 pounds lamb shoulder, cut into chunks (or substitute with mutton)
Salt and black pepper, to taste
3 tablespoons vegetable oil
2 large onions, chopped
4 cloves garlic, minced
4 cups beef or lamb broth
1 tablespoon Worcestershire sauce
1 tablespoon tomato paste
4 large potatoes, peeled and cut into chunks
4 carrots, peeled and sliced
2 parsnips, peeled and sliced (optional)
2 bay leaves
1 teaspoon dried thyme
Chopped fresh parsley, for garnish
Instructions:

Season the lamb or mutton chunks generously with salt and black pepper.
In a large Dutch oven or heavy-bottomed pot, heat the vegetable oil over medium-high heat. Add the lamb in batches and brown on all sides. Remove the browned lamb and set aside.
Add the chopped onions to the pot and sauté until softened, about 5 minutes. Add the minced garlic and cook for another minute.

Pour in the beef or lamb broth, Worcestershire sauce, and tomato paste. Stir to combine.
Return the browned lamb to the pot. Add the potatoes, carrots, parsnips (if using), bay leaves, and dried thyme.

Bring the stew to a simmer over medium heat, then reduce the heat to low. Cover the pot with a lid and let the stew simmer gently for 1.5 to 2 hours, or until the lamb is tender and the vegetables are cooked through.
Stir the stew occasionally and skim off any excess fat that rises to the surface.
Taste and adjust seasoning with salt and pepper, if needed.
Remove the bay leaves from the pot.

Ladle the hot Irish stew into bowls, garnish with chopped fresh parsley, and serve with crusty bread.
