In a large bowl, cream together the butter and sugar until light and fluffy.
Add the eggs, one at a time, beating well after each addition.
Sift the flour and baking powder into the bowl, then gently fold into
the mixture using a spatula or wooden spoon.
Stir in the milk to achieve a smooth, dropping consistency.
Divide the batter evenly between the prepared cake tins and smooth the tops.
Bake in the preheated oven for 20-25 minutes or until golden and
springy to the touch.
Allow the cakes to cool in the tins for a few minutes, then transfer
to a wire rack to cool completely.
Once cooled, spread one cake with strawberry jam and sandwich together
with the other cake.
Dust the top of the cake with icing sugar before serving.
